khichdi with twist


Ingredients:-
1.basmati rice-1 cup
2.chana dal-1/4 cup
3.toor dal-1 cup
4.haldi-1 tbsp
5salt as per taste
6.garam masala powder 1/2 tsp
7.cumin and black pepper powder-1/2 tsp
8. mixed veggy cut in small pcs(cauliflower,potato,green peas,carrot)
9. onion 1 big
10.cumin seeds,red chilly
11 oil.

method:
1) pressure cook rice and all dal with salt and haldi till 2-3 whistles.keep it aside.
2) heat oil add cumin seeds red chilly and onion.
3)add the veggies
4)add garam masala and cumin and black pepper powder.
5)fry till veggies are cooked.
6) add it to the pressure cooker having khichdi and mix well.
7)serve with ghee ,papad,dahi and achar.

matar chhole


Ingredients:
White Matar sok overnight
Onion 2 cut very small pcs
tomato 1 cut very small pcs
ginger garlic paste 2 tsp
haldi powder-1 tsp
chilli powder- 1 tsp
cumin powder- 1tsp
coriander powder- 1tsp
black pepper powder-1 tsp
amchur powder-1tsp
salt as per taste.
edible soda-1/2 tsp

method

1.Pressure cook matar with soda for 3-4 whistles and leave aside.
2.Heat oil add onion and fry till translucent
3.add tomato ,add all the powdered spices and salt and fry till oil seperates.
4.add matar from the pressure cooker along with the water in it.
5.leave it simmering for 10 mins on low flame.
6.serve with Naan or paratha.

Cramalized Fruits with Ice cream



My First prize winner recipe in desserts in 10 mins category recipe,conducted by Tarla dalal.


caramelised fruits with vanilla ice cream
the recipe:-2 medium-small firm bananas, peeled
2 kiwis cut in thick slices
1/2 tablespoon butter
3 tablespoons light brown sugar
1/4 cup dark rum, or orange juice
1/8 teaspoon ground cinnamon
1 cup low-fat vanilla ice cream

Cut bananas in half lengthwise. Melt butter in a nonstick skillet over medium-high heat. Add brown sugar and lay the banana slices and kiwis on top, cut side up. Cook undisturbed for 20 seconds, then add orange juice and cinnamon. Cook for 10 seconds, then turn bananas carefully and cook for 45 to 60 seconds more, basting with the pan sauce. Divide the bananas and kiwi between 2 dessert plates, drizzling the sauce on top. Serve immediately, with a scoop of ice cream (or frozen yogurt) topped with cherry and raisins.




tomato rice



Ingredients:

1.Cooked rice – 4 cups
2.Tomato – 5 no
3.Onion – 1 no
4.Green chilli – 2 no
5.Ginger – small piece
6.Turmeric – ¼ tea spoon
7.Red chilli powder – ½ tea spoon
8.Coriander powder – ½ tea spoon
9.Salt – as per taste
For seasoning
1Bengal gram – 1 tea spoon
2.Urad dal – ½ tea spoon
3.Mustard – ½ tea spoon
4Red chilli – 2 no
5.Asafoetida – 2 pinch
6Curry and coriander leaves – few
7.Sesame oil/ any other oil – 2 tea spoon

 method of preparation:
1.Cook rice, as such the cooked grains are separated well and not sticky
2.Chop onion, tomato, ginger, green chilli, curry and coriander leaves.
3.Heat a pan with oil , add mustard, then Bengal gram, urad dal, asafetida, broken red chilli; then add chopped curry, coriander leaves; add onion, ginger,  green chilli chopped; fry till onion is transparent.
4.Add chopped tomatoes, fry for 2 minutes; add all dry powders given and salt; cook until tomatoes are soft and mashed with spatula
5.Add cooked rice, mix well gently.Garnish with tomatoes and coriander leaves
6.serve with Raita and papad.

Alu bhaji

Ingredients
potato 4 cut in long strips .
onion 1 cut in long strips
hali powder 1tsp
cumin powder 1 tsp
black pepper powder 1 tsp
salt as per taste

Method
1.heat oil add onion and potatoes add salt and haldi powder saute it and cover for 2-3 mins
2 add cumin and black pepper powder and saute
3 check the potatoes if cooked add lil oil and fry till its little crisp.
4 serve as side dish

onion and lettuce uttapam

Uttapam is a very popular South Indian dish. Here is Uttapam recipe. 


Ingredients:
Batter (1:3 ratio of urad dal and rice)
1 Tomato
1 small Onion
lettuce leave for garnishing
1 bunch of fresh Coriander leaves
Little broken Cashewnut or Putna or both
1 or 2 Green Chillies
Method:
Put them all in a small chopper and cut them very fine
In a cup of batter, mix all of it and add little salt.
Put your non-stick pan or tawa on burner and heat it up to medium heat. Use a serving spoon to spread the batter thick, spread a tsp of oil on sides (optional) and cover the pan for a while. Fire should be between medium and low. When it is ready (light brown) remove the lid and turn the Uttapam with the help of a spatula.
Allow it to bake for a while without the lid now. Turn it once more and keep it for less than a minute to make it crisp add lettuce. Serve with sambar and coconut chutney

note:-Batter is made up of 1 portion of urad dal and 3 portions of rice. One half of the rice is boiled rice and other half is kolam or basmati or any rice other than boiled rice. Rice and dal are washed separately and left overnight to soak well and after grinding them very fine separately, they are mixed well and left to ferment in a warm place for 12 to 18 hours.
