mixed vegetables and beans cracked wheat pulav


healthy and delicious version of Daliya (cracked wheat or Bulgar wheat) for weight watchers.
simple and easy to make with calorie value of 120 for one bowl serving.

Ingredients:-

1) mixed beans(rajma,white eyed beans, canola bean...we usually get a pack in all the supermarkets)
    - 1 cup soaked overnight
2) mixed vegetables ( cabbage ,cauliflower, brinjal. green peas, carrots or anything of ur choice)

3) daliya or Bulgar wheat- 1 cup

4)onion 1 finely diced

5)1 tomato-optional

6)cumin seeds-1 tsp

7)green chilies-2

8)olive oil -1 tsp

9)a pinch of turmeric powder,1 tsp of garam masala powder

METHOD

1)heat a pressure cook add oil ,cumin seed,green chilly and onions
2)add all the beans,vegetables,powdered masala and salt
3)add daliya/bulgar wheat and tomato and stir well.
4)after around 5 mins add 1 cup water and pressure cook till 2-3 whistles.
5)serve with yogurt or raita.

lemon rice


One of the yum  rice recipe from southern India .I discovered its great taste when there was left over rice in my freeze ,and above that I were super-lazy that day,Just served it with curd and achar,My hubby took it as a treat.:)

Ingredients:
2cups boiled Basmati  Rice
1/3rd cup Lemon juice
6Tbsp Oil
1/2tsp Black Mustard seeds
Few curry leaves
3-4 green chilies
coriander leaves
onion- 1 finely cut lengthwise
Salt to taste
1/4th tsp. turmeric powder
1/4th cup peanuts
1 tbsp chana dal


Method

1.Heat oil in a pan and add mustard seeds, allow to splutter.
2.Add onion let it golden brown add turmeric powder chana dal and peanuts , fry.
3.Now add green chilies, curry leaves, salt and fry for 2 minutes.
4.Take it off from the flame and add lemon juice and mix well.
5.Now add this to the boiled rice and mix well add coriander leaves ,Lemon rice is ready to be served.

tomato rice



Ingredients:

1.Cooked rice – 4 cups
2.Tomato – 5 no
3.Onion – 1 no
4.Green chilli – 2 no
5.Ginger – small piece
6.Turmeric – ¼ tea spoon
7.Red chilli powder – ½ tea spoon
8.Coriander powder – ½ tea spoon
9.Salt – as per taste
For seasoning
1Bengal gram – 1 tea spoon
2.Urad dal – ½ tea spoon
3.Mustard – ½ tea spoon
4Red chilli – 2 no
5.Asafoetida – 2 pinch
6Curry and coriander leaves – few
7.Sesame oil/ any other oil – 2 tea spoon

 method of preparation:
1.Cook rice, as such the cooked grains are separated well and not sticky
2.Chop onion, tomato, ginger, green chilli, curry and coriander leaves.
3.Heat a pan with oil , add mustard, then Bengal gram, urad dal, asafetida, broken red chilli; then add chopped curry, coriander leaves; add onion, ginger,  green chilli chopped; fry till onion is transparent.
4.Add chopped tomatoes, fry for 2 minutes; add all dry powders given and salt; cook until tomatoes are soft and mashed with spatula
5.Add cooked rice, mix well gently.Garnish with tomatoes and coriander leaves
6.serve with Raita and papad.

gajar matar pulav


Quick version of pulav when there is no time saute the rice and boil the water.
Ingredients:-
rice-2 cups
carrot-dice into cubes-1/2 cup
peas-frozen or fresh-1/2 cup
coriander seeds 1 tsp
salt as per taste
oil- 2 tbsp
water 4 cups

add all the ingredients in a pressure cooker and cook for one whistles and set it aside.
open when pressure is released.hot quick pulav ready to serve.

chicken Dum biriyani

Ingredients:-

1/4 cup ghee (clarified butter)
20 whole cloves
9 whole cardamom pods
5 bay leaves
1 medium onion, chopped
2 tablespoons ginger garlic paste
1 (3 pound) whole chicken, cut into pieces
1 1/2 cups plain yogurt
1 teaspoon salt
4 tbsp Biriyani masala
1 teaspoon haldi powder
1 teaspoon lal mirch powder
1/2 teaspoon coriander powder
1/2 teaspoon zeera powder
1/2 teaspoon black pepper powder 
3 cup half cooked jasmine or white rice
For Garnishing:-
1 sprig coriander leaves 
1 onion cut in thin slices and fried till brown
1/2 cup cashews fried or roasted.



Method:-

1)Marinade chicken with yogurt and biriyani masala for 2-3 hrs.
2)heat Ghee or vegetable oil and add whole cloves,whole cardamom pods,bay leaves,medium onion, chopped,ginger garlic paste
3)after 5 mins add all the powder masala and fry after 10 mins add marinated chicken and 2 tablespoon biriyani masala.
4)when chicken starts releasing water fry a little more for 5 mins and then keep it aside.

For layering of biriyani:-

1)In big vessel add half chicken then add half boiled rice and then remaining chicken and then remaining rice on the top.
2)cover the vessel and put it on Sim for 1 hr.do not stir in between.
3) Garnish with fried onions,coriander leaves and fried cashews.
4) serve with raita of ur choice.
