Baked spaghetti with vegetables and eggs



A very healthy and fulfilling recipe for kids and us too ! just requires assembling all the ingredients and popping in the oven...Here you go:)


1)fresh vegetables ( I have used broccoli,carrot,capsicum ,onion, green bean)
2) 3-4 tomatoes chopped or 1/2 can of chopped tomatoes.
3) spaghetti 
4) oregano-1 tsp
5) salt and pepper
6) Grated Parmesan cheese
7) 2 eggs
8)2 tbsp butter


Method



  1. Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook tomatoes and onion over medium heat until it has consistency of a sauce add oregano salt and pepper.
  2. In a large bowl, whisk 1 egg, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat.
  3. Place all the vegetables in first layer,2nd layer of  the spaghetti mixture in a greased baking dish. Top with the tomato mixture break the second egg on the top and sprinkle with more Parmesan cheese.
  4. Cover and bake at 350 degrees F for 40 minutes. Uncover and bake for another 10 mins.
  5. Serve hot!

Masala french fries.

Ingredients

5 Large Roasting Potatoes
2 Tbsp. Olive Oil
Salt and Pepper to Taste
chilly powder-1tsp
chat masala-1 tsp


Method

Begin with some nice roasting potatoes . While you’re doing that – lets preheat the oven to 400 degrees.
Then Peel and Wash the potatoes to prepare for slicing.
Here is my tool a mandoline or just use your knife and be sure to cut the french fries even in size to ensure even cooking.
Once sliced, place the potatoes in a bowl and cover with water.
I like to have the potatoes soak in salted water for about 30 minutes to release some of the starch and allow the fries to crisp up in the oven.
After the 30 minutes elapsed – it is time we dry the potatoes. This is a crucial step. If the potatoes are not completely dry, they will not crisp up as nicely and the moisture will cause them to steam in the oven.
Lets go ahead and lay the potatoes on some parchment paper, season them with salt and pepper and brush some olive oil on the tops of them. Once in the oven, ensure that you turn them periodically to ensure even browning. Bake for about 45 minutes or until golden brown.
sprinkle chilly powder and chat masala.
Here is the final product…. crispy and yummy! Get you favorite dipping sauce out and ENJOY!

Nan-khatai - An Indian cookies

Nankhatai puts me in flashback and evokes lots of memories in me mainly because,that is probably the closest I came to baking while I was a child.I don’t remember if I enjoyed eating it as much as I enjoyed seeing it baking in our OTG which my father bought for me just because I insisted him alot.I used to shout in happiness when I saw them puff up and break oh-so-gently on top making it the best and perfect nankhatais ever.One day one of my childhood friend Premu told me that how much she liked the nankhatais made by me though ahan!! she never praised me that time :)..So for you my loving Friend Premu I am putting this recipe first time on my blog :).


Ingredients

Maida/Flour - ¾ cup
Cooking soda - 1/8 tsp
Powdered Sugar - ¼ cup
Ghee or unsalted butter - 1/3 cup[generous]
Cardamom and Powdered Nutmeg - ¼ tsp each
Preheat oven to 180C.

Method :-
Cream the sugar and the ghee until well blended.
Sift the flour with the soda. Add this to the sugar-ghee mixture. Add the cardamom and nutmeg powders. 
Make a dough and divide into small balls. 
Flatten each ball onto a cookie sheet and bake for 20 minutes at 180 C.
Allow to cool and store in airtight containers.

vegetable poha!!

Ingredients:
• 1 1/2 kg Poha (thick ones) 
• 2 Potatoes (medium sized) 
• 4 tbsp Green Peas 
• 4 tbsp Ground Nuts 
• 2 Onions (medium sized) 
• 7 tbsp Oil 
• 1 tsp Mustard Seeds 
• 5 Green Chilies 
• 1 Carrot (finely chopped) ,cauliflower chopped,potatoes cut very small
• 11/2 tsp Turmeric Powder
• 3 tbsp Coriander Leaves (finely chopped) 
• 1 lemon (juice) 
• Curry Leaves (few) 
• Salt to taste 
How to make Vegetable Poha:
Wash the poha nicely and strain all the water out. Keep it aside.
Heat oil in kadai or a wok. Add mustard seeds and ground nuts.
When they start to splutter add onions, chilies, potatoes, carrot, green peas, capsicum,cauliflower and curry leaves.
Fry them till the onions turn pink and the vegetables become soft.
Add turmeric powder, salt and poha. Stir them well and allow it to simmer for five minutes
Add lemon juice, and garnish it with coriander leaves.
Serve hot.

CAULIFLOWER CHILLY








A great starter and yummy too!!


Ingredients:

Cauliflower cut into bite sized Florets - 500gms  
  Gram Flour (Besan) - ½ cup  
  Ginger grated - 1 tsp  
  Corn Flour - ½ cup

  Ginger Garlic Paste - 1 tsp

  Green Chilli Paste - 1 tsp

  Soya sauce: 1 tsp for Flour Paste, 2 tbsp for Sauce

  Oil for frying

  Salt to taste

  Onion finely chopped - 1 small

  Tomato Ketchup - 4 tsp

  Chopped Cilantro (Coriander Leaves) or Spring Onions for garnishing



Method:

Cook Cauliflower for about 5 minutes until tender in pan of boiling Water. Drain, pat dry with a towel and set aside.
Next mix together Gram Flour, Corn Flour, Ginger Garlic Paste, Chilli Paste, Soya Sauce and Salt with some Water to form a thick Batter. 
Heat Oil in a pan on medium heat. Dip each Cauliflower Floret in the Batter and fry till it becomes crispy. Lay them on a tissue paper to drain the excess Oil.
Heat a teaspoon of Oil in a pan, sauté the Onions till golden brown.


 Next add Tomato Ketchup and Soya Sauce to the Onions and mix well (add 1/3 cup of Water if you want to make it wet version)


 Add the fried Cauliflower and mix well until it's coated with the Sauce.


Garnish with coriander leaves or Spring Onions and serve hot!





DHOKLA IN MICROWAVE












Ingredients for dhokla
Besan/Gram flour-1 cup
Oil-3tsp
(I didn't use)
Salt to taste
Curd-2tbsp
Baking soda-1/8tsp
Sugar-1/8tsp
Lime juice-1tsp
Turmeric powder-less than 1/8tsp
Hot water-1/4 cup
Grated ginger & green chillies together-1tsp
Liquid to pour on top
Water-1/2 cup
Salt a pinch
Sugar-1 & 1/2 tsp
Lime juice-1tsp
(mix everything together)
Tempering
Oil-2tsp
Jeera-1/2 tsp
Mustard-1tsp
Garnish
Chopped coriander leaves & grated coconut




Method
Grease a glass tray & keep it aside.In another bowl mix besan,curd,salt,lime juice,sugar,grated ginger & green chillies.Pour hot water & whisk it well without any lumps.Now add the cooking soda mix it well & pour it immediately in the greased tray.Microwave it for 3 minutes.Insert a tooth pick to check its done.Cut into desired shape & pour the liquid on top while still warm.Temper & garnish it .Serve it with green chutney.

Kachri Chana dal






Ingredients:
Chana dal (Split Bengal gram) – ¼ Cup
Onions: ¼ cup, finely chopped
Green chilies: 2-3, finely chopped
Ginger paste : ½ tbsp
Garlic paste – ½ tbsp
Coriander leaves, finely chopped
Turmeric powder (Haldi): ½ tsp
Red chili powder – ½ tsp
Coriander powder : ½ tsp
Salt to taste
Oil for cooking


Method
Soak chana dal overnight.
Blend it using minimum amount of water possible.
Add the remaining ingredients; onions, green chilies, ginger paste, garlic paste, coriander leaves, turmeric powder, red chili powder, coriander powder and salt. Mix well.
Make small balls out of the mix. Flatten the balls slightly so that they are completely cooked on frying.
Deep fry these balls in hot oil on medium flame.
Serve hot with any chutney.

nimkee



Ingredients:
Maida - 1 cup
Kalonji seeds - 1/4 tsp
Salt - 1/2 tsp
Baking Powder - 1/2 tsp
Whole black pepper - 20
Water - less than 1/2 cup
White Oil - 3 tbsp + 2 cups (for deep frying)
Preparation:

  1. Take maida in a bowl. To it add kalonji seeds, salt, baking powder, and 3 tbsp oil. Mix well for 5-6 min.
  2. Then add water to make it into a tight dough. Knead well for 7 min.
  3. Make 20 small balls. Using a rolling pin, flatten the balls to a very thin pancake.
  4. Fold into half  2 times consecutively giving it the shape of a quadrant or square
Cooking procedure:
  1. Heat oil in kadai.
  2. Add the prepared nimki/crackers to oil and fry on slow heat.
  3. Remove the nimki/crackers when brown and keep aside. Drain excess oil by keeping the fries on a paper towel.

fried chivda (maharashtrian style)

Ingredients:-
poha or chuda-2 cups
murmure-1 cup
Roasted chanal(phutana)-1 cup
roasted pea nuts 1 cup
kishmish 1/4 cup
potato chips any-1/2 cup
haldi powder-1/2 tsp
cumin powder-1/2 tsp
dhaniya powder-1/2 tsp
chat masala-1 tsp
salt-2 tsp
sugar-2 tsp
green chillies-2-3 cut small
Cumin seeds1/2 tsp
Black mustard seeds-1/2 tsp

Method:-
1)heast oil and roast chuda till crispy and keep aside.
2)fry murmura with lil oil and and keep aside
3)fry phutana umtill crisp.
4)Heat oil in a kadahi and add cumin and mustard seeds and green chillies add all the spices.
5)add chuda,murmure,phutana,peanuts,kishmish and mix well.
6) Keep aside and add chat masala.sugar and salt and mix well add crushed potato chips
7)keep in air tight container once it cools down.
