chicken with methi

Chicken is always a go-to main course for quick, easy, and healthy meals. This chicken recipe with methi leaves is as healthy as they are delicious and versatile!
One of my colleague at work asked one day ‘I wonder how do you manage to cook Indian curries after office?’ I replied ‘Nothing is as easy to prepare like our curries.’
And I really agree with this  J
Yesterday night both my babies (hubby and the little one) not at all in mood of eating vegetarian ….I had some methi leaves lying down in the refrigerator for two days with the plans of methi paratha …. ..mixed and matched it with our common ingredients we usually have in our kitchen with Chicken  and the outcome was awesome!!
The amount I am cooking is to satisfy two and half very hungry people JJJJ


Ingredients:
1)    chicken 500 g (cut into bite size pcs)
2)    Onions-2 large chopped very fine
3)    Tomato-2 large chopped very fine
4)    Methi leaves 1 bunch around 2 coffee cup chopped fine
5)    Yogurt -1/2 cup
6)    Ginger garlic paste  -1 tbsp
7)    Powdered spices (turmeric  -2 tsp,cumin powder-2 tsp,black pepper powder-2 tsp, red chilly poder-2 tsp, Coriander powder -2 tsp)
8)    Salt
9)    Vegetable oil-2 tbsp
10)  Cumin seeds ½ tsp
11)  Bay leaves 2 optional
12)coriander leaves for garnish

Method
1) Heat oil in a non-stick pan and  add cumin seeds ,bay leaves and let them splutter, add chopped onions and fry them until they are translucent.
2) Add all the powdered spices, ginger garlic paste and salt and bhunao it for 5-6 mins.
3) Add tomatoes, chilli powder, coriander powder and yogurt and cook covered till well cooked.
4) Add methi leaves and chicken and cook till sauce becomes thick.
5) Add coriander leaves and mix well.
6) Serve with rice or chapatti.

MOM style mutton Curry


This is my go-to recipe when I want to cook a simple and wholesome non-vegetarian meal for my family. The basic recipe for this dish is my Mom's so I know it is good as I grew up eating it. Mom would cook meat curry with goat meat (also called mutton in India).
The basic Mantra is using the equal amount of mutton and onions and absolutely no water,You get a nice and rich gravy made with onions and juices released from the mutton. Goat Curry or Mutton Curry is delicious served with plain rice and a salad . If you dry away the gravy, it tastes just as good with hot, freshly made rotis.

Ingredients:-

1)1 kg Mutton( Goat's shoulder side pieces )
2)1 kg Onion(cut in big chunks 1 medium sized onions cut into 4 pcs)
3) all Indian spices(Turmeric powder- 1 tbsp,Chilly powder-2 tbsp,cumin powder-1 tbsp,black pepper powder 1 tbsp,Coriander powder- 1 tbsp)
4)cumin seeds 1 tsp
5)black pepper seeds-1 tsp
6)Bay leaves/tej patta -2-3
7)whole red chilly -2-3
8)vegetable oil -1/2 cup
9)ginger garlic paste-2 tbsp
10) julienne Ginger 3 tbsp
11)salt

Method:-

1) Heat oil in the pressure cooker and add cumin seed,pepper seeds,whole red chilly,tej patta and let it splutter.
2)Add 1/2 kg onions and sauté on medium heat for 10 mins,when they turn translucent add all the powdered spices,ginger garlic paste,Salt and sauté for 5 mins.
3) Add the mutton pcs and fry for another 10 mins and add the remaining 1/2 kg onions to the pressure cooker and fry for another 5 mins.
4) put the lid on and cook on medium heat until three whistles.
5)keep aside from heat and let the pressure get released itself.
6)open the lid and put the cooker again on stove at slow heat and half covered for 10 mins.
7) serve with plain rice and onion salad....Yum!!!

Chicken in Bread crumbs...KFC STYLE!



A super easy recipe with unusual combination of few calorie and taste bud on priority!
My goal here is to prove that you can still get the same great taste of fried chicken without it actually being fried, saving you tons of saturated fat, calories & sodium AND to prove that you can make a homemade healthy meal for the family in basically no time at all. Think of it this way, if you’ve got time to drive to KFC, get the food and drive home, then you’ve got time to make this!
So here we go with the recipe.....


INGREDIENTS:-


1 whole organic chicken portioned (2 breasts, 2 drumsticks, 2 thighs, 2 wings)


2 cups bread crumbs (I used Progresso Italian style bread crumbs one can use any other normal form)
2 egg – whisked for 1 minute to lighten
1 tsp paprika/kashmiri mirch powder(MDH)
1 tsp tomato powder (I used knorr tomato soup powder)
1/4 tsp salt
1/4 tsp pepper
olive oil spray

METHOD:-


Preheat oven to 420°F.


Arrange all the ingredients in a row in the following order: the chicken pieces, whisked eggs with Salt and pepper and paprika,tomato powder added, breadcrumbs.


Begin by dipping the chicken pieces in the egg holding the chicken over the bowl for a few seconds after wards to let excess egg fall off and then coat in the breadcrumbs coating all sides. Pat the crumbs onto the pieces with clean hands to make sure it sticks. Lay on a foiled oven tray. This assembly line is a great time to get the kids involved! my lilttle one loved helping me and licked her messy hands


Once all the pieces are crumbed spray liberally on all sides with the olive oil spray.


Pop in the oven for 20 -25 minutes approx until internal temp of 165°F and the crumbs are crispy and ‘fried’.turn over the chicken and pop into the oven for another 10 mins. That’s all there is to it!


SERVE WITH KETCHUP OR CORIANDER CHUTNEY OR MAYO....I SERVED IT WITH EVERYTHING MIXED TOGETHER YUMMMMM!!!

grilled chicken in green marination!

Another form of chicken tikka but this time rather than marinating the chicken in curd mixture we are using coriander and mint paste.a very tempting starter for dinner parties.here we go with the recipe.


ingredients


boneless chicken fillet cut in cubes - 250 g


 for marination
onion-1
coriander leaves-2 cups
mint leaves -1/2 cup
green chiilly-3-4
ginger- 1 small pod
garlic -2-3 pods
lemon juice- 1/2 cup
olive oil/any vegetable oil 1/2 cup
salt -as per taste
pepper 


Method:-


1)make a paste of onion,coriander,mint,green chilly,ginger and garlic in a blender.
2) add oil,lemon juice,salt and pepper to the mixture and mix well.
3)add chicken pcs and leave to marinade for 2-3 hrs in a fridge.
4) Preheat the oven to it's highest heat for at least 20 minutes. Shake off excess marinade and place chicken pieces AND VEGETABLES OF UR CHOICE on skewers on a wire rack in the oven. Cook for 15-20 minutes and check the is cooked by piercing the thickest piece with a skewer, if the juices run clear it's cooked, serve with chicken  a wedge of lemon.

chilly chicken dry!


An easy recipe which can be served both as starters as well as main-course.absolutely delicious for all the chicken lovers.
We require very simple ingredients:)

  1. Onions                                             200  gm
  2. chicken(with bone or boneless)            500  gm                                        
  3. Chilli Powder                                     25    gm
  4. Chilli sauce                                       10   gm
  5. Tomato ketchup                                 10   gm
  6. Soya sauce                                        5    gm
  7. Orange color                                      2    gm
  8. Vinegar                                             10  ml
  9. Salt                                                  to  taste
  10. cornflour                                            10 gm
  11. egg                                                   1      
  12. Capsicum                                           50 gm
  13. Coriander leaves                                 20 gm
  14. Oil                                                    required


Procedure:

1.Clean the chicken.Add chilli powder, chilli sauce,soya sauce, vinegar, salt. Keep aside and soak for one hour.

2.take the chicken pieces out of the bowl to remove the excess water and keep it in another bowl.

3.Add egg and cornflour to the chicken and mix well.Shallow fry the chicken pcs and cook in small batches.

4. Slice the onions into thick pcs. Cut the capsicum, remove the seeds and cut it into lengthwise slices.

5. Heat oil, fry onions and capsicum. Add salt and then put the chicken and fry for few minutes.add tomato ketchup,chilly sauce and soya sauce fry till its all the sauces are absorbed.

6. Serve hot, garnished with corainder leaves.

A delicious platter of a refreshing lemon and herb marinated chicken roast






One of the things I love about cooking is that it’s creative – I’m mixing flavours, colours, things
that go well together on a plate. I discovered this recipe by mixing and matching the ingredients
roasted chicken are always dry so a little enhancement in the cooking technique made it supermoist
With its juices inside, and the sweet chilly sauce stir fried rice noodle counteracts that heartily.
Also the lemony aroma in the food and lots of coloured veggy look beautiful together.

I love putting a wet mess of ingredients into an oven and taking out an hour later.
I’ve discovered recently that I can smell when food is ready. I’ve got a nose for Food :).

~Recipe for  Refreshing Lemon and Herb Chicken Marinade


This chicken marinade has a very fresh and tasty zing to it.  It is a perfect chicken marinade
for those that are adverse to spicy dishes. Also, one of the most recommended chicken marinades
for the summer months.

Ingredients:

2 onion
3 teaspoons of oregano
1 spoon cornflour
3 teaspoons of thyme
6 garlic cloves, finely chopped
1 cup of lemon juice
1/4 cup of oilve oil
2 whole chicken breasts, split in half

for stuffing

1)grated cheese any type (i have used cheddar)
2)finely chopped onion
3)lemon zest (skin of lemon) 1 tbsp

Method:

Rub the chicken with the cut half of the onion, then discard the onion.
Thoroughly mix the herbs,cornflour and garlic with the lemon juice and olive oil.
slit the chicken breast in such a way that a pocket is formed and stuff it with stuffing mixture
Coat the chicken in the marinade, making sure all areas are covered.
Marinate for at least 4 hours, up to a maximum of 48 hours.
cut a big square from an aluminium foil and place the chicken in the mid of it pour over little marinade
and place an onion ring on the fillet and cover with aluminium foil forming an envelope,The need of doing this is to keep the chicken moist
and full of flavour which otherwise burns away due to high heat of the oven
Bake in the oven at 200 degrees celsius/ 390 degrees fahrenheit for 30-40 mins.

honey-soy glazed chicken drumsticks

Ingredients
300 g chicken drumsticks
2 tbsp soy sauce
3 tbsp honey
1 tsp chinese five spice
3 tbsp tomato sauce
1 tsp grated ginger
1 garlic clove, crushed
1 tsp olive oil

Method

1. Preheat oven to 180°C. Combine all ingredients and mix through drumsticks. 

2. Line the drumsticks on a baking tray and cook for 20 minutes.

tomato chicken..


TOMATO CHICKEN CURRY

ingredients:

3 tablespoon olive   oil

4 chicken pieces

½ teaspoon mustard seeds (I used a mixture of brown and black)

½ teaspoon fenugreek seeds

1 large onion, finely chopped

2 cloves garlic, crushed

1 x 2.5cm root ginger, finely chopped

1 green chilli, chopped

1 tablespoon ground coriander

½ teaspoon ground turmeric

½ teaspoon chilli flakes

1 teaspoon salt

1 400g tin chopped tomatoes

juice of half a lime

10 curry leaves

method:

heat the oil in a heavy based pan, over a medium – high heat

brown the chicken and set aside

add the mustard seeds and when they start popping add the fenugreek seeds

add the onion and sauté until soft without browning the onion

add the garlic, ginger and chillies and cook until the onions become golden

add the spices and salt and allow to cook until you can smell the spices

add the chicken, the tinned tomatoes, the lime juice and the curry leaves

cook for 40 minutes to ensure the chicken is cooked through

fruity chicken curry for kids!


750 g skinless chicken breasts, cut into 2 cm cubes
1 tbsp oil
1 medium onion, peeled and finely chopped
2 garlic cloves, crushed
2 cm piece ginger, peeled and grated
turmeric powder 1/2 tsp
black pepper 1/4th tsp
50 g sultanas
432 g can pineapple chunks
 200 ml water
15 g pack fresh coriander, finely chopped

method


1. heat oil Add the onion, garlic, ginger,turmeric powder,pepper and salt and sultanas and saute for 2 - 3 minutes
2. then add the chicken and add the pineapple, ansd saute for 5 mins
3. add water and Cook for 20 - 25 minutes.
4. Stir in the coriander, then serve with naan bread and rice.


MURG MASSALLAM!! AN INDIAN WAY OF THANKS GIVING!!!


Ingredients-

1 whole chicken without skin
5 boiled eggs
yogurt half cup
spices(turmeric,garam masala,red chilly powder,black pepper powder,cumin powder)
ginger garlic paste
salt

half cooked basmati rice
saffron strands dipped in 2 spn water
cashew roasted
raisins

for the curry

onions-4
spices(turmeric,garam masala,red chilly powder,black pepper powder,cumin powder)
ginger garlic paste
salt
olive oil or any vegeatable oil-4 tbsp

method

1)wash the whole chicken thoroghly with tap water and pat dry with kitchen towl
2) make a mixture of yogurt half cup, spices(turmeric 2 tsp,garam masala 1tsp,red chilly powder 2 tsp,black pepper powder 1 tsp,cumin powder1 tsp salt-as per taste)
ginger garlic paste 2 tsp

3) rub the mixture all over chicken and inside  with hands and leave it aside unrefrigerated  for 2-3 hrs
4) mix rice , cashews raisins,saffron salt and pepper and stuff inside the chicken also stuff two boiled eggs.
5) after three hours drizzle oil on the chicken and put it in the oven at 250 deg cent for 30 mins.

6)check alternatively the meat should not be dry,take it out an let it rest for 15 mins
7) by that time prepare curry
a)add oil and saute finely cut onions till pink 
b) add all the  spices(turmeric 2 tsp,garam masala 1tsp,red chilly powder 2 tsp,black pepper powder 1 tsp,cumin powder1 tsp)
ginger garlic paste 2 tsp
salt per taste
or u can custom the quantity as per your taste if u love more spicy food.
c)keep frying  and then add little water so that everything mixes up properly
8) pour this curry over chicken and put it in oven for 10 mins at 250-350 deg cent.
9)take it out and serve with half cut boiled eggs.

10)i my version while cooking chicken in oven i added some half cut potatoes and quarte cut onions all around chicken with oil drizzed over it.... believe me everybody will love it.

garlic and Mediterranean herbs chicken




4 chicken breasts
1 x pack Maggi® So Juicy™ for Garlic and herb Chicken
1tbsp sunflower oil
1tbsp sesame oil (optional)
Juice of 1 lime
2 spring onions, finely sliced
2tsp sesame seeds (optional)
Onion roughly chopped 
broccoli roughly cut
 
Method

Preheat the oven to 180°C (160°C for fan ovens) or Gas Mark 4 and cook the chicken according to the pack instructions.

15 minutes before the end of the cooking time, In a baking tray add onions , broccoli or an vegetable of ur choice spray with olive oil and add coarse salt and pepper.put in the oven at 200 °C  for 15 mins

serve the chicken with roasted veggies and rice.

dhaniya chicken

Ingredients:
1 lb chicken
~3/4 bunch of Dhaniya/coriander leaves
1/2 cup yogurt
1/2 large sized onion (when chopped came to a little less than 1 cup)
6 cloves of garlic chopped
2 tsp ginger paste
1/2 tsp red chilly powder (I reduced this, if you can use more to your taste to make it a bit spicy)
salt to taste
~ 1/3 cup oil or maybe a few drops more


Method:
Make a paste of ginger, garlic, cilantro. Mix with chopped onions, yogurt and salt. Marinade chicken in this and keep in the refrigerator for 3 hrs or longer.
Heat oil and add the chicken and marinade together. As soon as it starts to boil reduce the heat and let it simmer till oil separates from the masala and chicken is fully cooked. Do not add any water, it is meant to be a somewhat dry dish.

Enjoy with rice or rotis!




Quick chicken

A very yummy quick chicken recipe prepared by my husband.here we go with the recipe.
Ingredients:
Chicken-1 kg
onions-500g
ginger gralic paste-2 tbsp
turmeric powder-1 tbsp
red chilly powder-1 tbsp
cumin powder-1 tbsp
pepper powder-1 tbsp
coriander powder-1 tbsp
salt
cumin seed-1/2 tsp
black pepper-1/2 tsp
whole red chilly -1-2
oil 4 tbsp

Method:-
Heat oil in a pressure cooker add cumin seed-1/2 tsp,black pepper-1/2 tsp,whole red chilly -1-2 and onions after 1 min add all the powder spices and ginger garlic paste and salt add Chicken and stir once or twice and close the lid of pressure cooker.after 1-2 whistles keep it aside and let it cook in its own steam .
Open the pressure cooker  and simmer it for 10-15 mins on low heat partially covered.



Saag Chicken



Another hot favorite North Indian dish! This mildly flavoured spinach dish is super healthy too.I tried this recipe first time in my kitchen and it turned out really delicious.

Ingredients:

500 g Chicken with bone or boneless as per your choice
2 medium-sized bunches of fresh spinach (approximately 500 gms) very thinly chopped.
4 tbsps olive oil/vegetable oil
2 large onion chopped fine
1 tsp cumin seeds
1 chopped green chilly
2 large tomato diced
2 tsps garlic paste
1 tsp ginger paste
2 tsps coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp red chilly powder
1 tsp garam masala powder
Salt to taste
1 tbsp of butter to garnish

Preparation:

1.Wash chicken , Heat 2 tbsps of oil in a heavy-bottomed pan and stir-fry the chicken till all the water released from the chicken dries up. Keep aside.
2.Add 2 tbsps of oil to the same pan add cumin and green chillies and add onions and fry the onions till soft.
3.Add the ginger and garlic pastes and fry for a minute.
4.Add the tomato, coriander, cumin,red chilly, turmeric and garam masala powders and mix well. Add salt to taste and mix well.
5.Add the spinach.Cook till the spinach are soft and like pulp. Mash well into a rough paste. If you prefer, you can also blend this paste in the food processor to get a smoother consistency.
6.Add the Chicken pcs to this gravy and mix to coat the pieces.Simmer on low heat for 30 mins partially covered.
7.Garnish with butter  or fresh cream and serve hot with Roti or rice.

salmon fish chilly




A fish chili recipe is great tasting food and easy to prepare.I have used salmon fish as it tastes almost like fresh water fish. A nice change from traditional fish curry or fish fry, fish chili usually doubles well and can be a crowd pleaser. Serve it with chapati or noodles and you will have a terrific meal.
OK, let‘s check out a fish chili recipe:-


ingredients:-

salmon fish fillets -250 g(cut in strips or square pieces)

Onion                                                   - 2 big
Soya sauce                                           - 2 tbsp
Egg                                                      - 1
Pepper                                                 - ½ tbsp
Green chilly sauce                                 - 1 ½ tbsp
Ajinomoto                                             - a pinch
Garlic paste                                          - ½ tbsp
Corn flour                                             - 1 tbsp
Garlic                                                    - 4 pods
Green chillies                                        - 1 or 2
Capsicum red and green                          -2 big cut in strips lengthwise
Vinegar                                                  - ½ tsp
Oil to fry
Salt to taste


Method:-
Wash and clean the fish pieces

Marinate in soya salt, pepper  green chilli sauce,garlic paste and corn flour for 1 hour.

Heat oil in a fry pan, fry the marinated fish till they turn dark brown in color.

Remove excess oil, by wrapping in tissue paper.

In the hot oil, add chopped garlic, grenn chillies , onion and fry for 2 mins.
Now add fried fish, capsicum and sauté on medium flame.

To this add, soya sauce, green chilli sauce, pepper, ajinomoto and mix well .
Turn off the flame, add ½ tsp vinegar and stir.
Garnish with coriander leaves.

egg chatpata


after regular sabji and dal all over the week,Even I am saturated what to cook on Friday night???? which should be easy and yummy too after a tiring week. Tried these chatpata eggs last night with the ingredients whatsoever came in my hand.And believe me ..It came out so good 
A real surprise to our taste-buds...here the recipe is...

ingredients:-

1)4 boiled eggs Cut into half
2)onions -2 finely chopped
3)tomatoes-1 finely chopped
4)Yellow and green bell peppers- 2 finely chopped
5)spring onions finely diced.
6) cumin ,coriander and black pepper powder-1 tbsp
7)salt- as per taste
8)soy sauce,chilly sauce,oyster sauce,tomato sauce,Aginomoto- all as much u want!!!
9)Olive oil-2 tbsp

Preparation:-
1)heat oil in a pan and add onions and fry till translucent.
2)add all the powdered masala and salt.and buno it.
3)Add tomatoes and bell peppers and keep frying on high heat.
4)Add sauces and aginomoto and fry to make it little dry.
5) add the eggs and fry with carte so that eggs do not break.
6)Serve with Roti or paratha or wrap it in tortillas....tastes equally good.

chilly chicken dry Indian style!!


Ingredients:

Chicken boneless or with bone as per your choice- ½ kg
Onion                                                   - 2
Soya sauce                                           - 2 tbsp
Egg                                                      - 1
Pepper                                                 - ½ tbsp
Green chilly sauce                                 - 1 ½ tbsp
Ajinomoto                                             - a pinch
Garlic paste                                          - ½ tbsp
Corn flour                                             - 1 tbsp
Garlic                                                    - 4 pods
Green chillies                                        - 1 or 2
Capsicum chopped                               - ½ cup
Vinegar                                                  - ½ tsp
Oil to fry
Salt to taste

Method:-
Wash and clean the chicken pieces

Marinate in soya sauce, salt, beaten egg, pepper pwd, green chilli sauce, aginomoto, garlic paste and corn flour for 1 hour.

Heat oil in a fry pan, fry the marinated chicken till they turn dark brown in color.

Remove excess oil, by wrapping in tissue paper.

In the hot oil, add chopped garlic, grenn chillies , onion and fry for 2 mins.
Now add fried chicken, capsicum and sauté on medium flame.

To this add, soya sauce, green chilli sauce, pepper, ajinomoto and mix well .
Turn off the flame, add ½ tsp vinegar and stir.
